Alright, call me crazy. In planning my Easter dinner for family and friends, I knew I had to take a stab at a Gluten Free Coconut Cake. What didn’t occur to me until just prior to baking, was that I would turn it into an Easter Bunny!
Funny how food memories can smack you right when you least expect it… Having decided this morning to give a great standard recipe a GF go, I recollected my mother’s having made our family what I believed was the most amazing cake ever… Firstly, it was coconut; my most favorite. Secondly, it was a giant, beautiful snowy Easter Bunny! Thirdly, since my birthday was only a week later, I was convinced it was made especially for me. (As I recall, my three brothers weren’t nearly as excited as I was… I imagine they would have preferred an Incredible Hulk cake!)
So, despite the fact that there will be 8 adults and no children at my Easter dinner, I took on a GF recipe conversion with much success and added an artistic spin that beats coloring Easter Eggs any time! I can’t wait to show my mother! I know she’ll be as tickled as I am that I conquered the cake and remembered the love that she put into making my childhood Easter so special.
